Should I use 15° or 20° angle?
The 20° angle delivers a strong, durable edge - perfect for daily kitchen use and tougher outdoor tasks. It sharpens fast and holds up well under pressure. The 15° angle creates a sharper, more refined edge, ideal for premium blades like Damascus or high-carbon steel - great for clean, delicate cuts. Here’s a quick overview:

How long does it take to sharpen?
Sharpening with Rollie™ for the first time takes between 2 and 6 minutes, since most knives have a cutting angle between 15° (Japanese) and 20° (Western & Others). So you just pick a side and sharpen it to your chosen degree. Harder materials like Damascus can take up to 10 minutes on the first sharpening.
Re-sharpening takes only a few rolls back and forth, because the specific angle has already been given to the blade.
